A friend of mine shared a recipe for Gluten-Free Chocolate Quinoa Cake. I loved the concept, as chocolate is a great way to hide the slightly nutty flavor of quinoa. I made two batches- the first one I did as it was written, and for the second one I modified a lot of things. I cut back on the oil and sugar, made the recipe pareve, added in chocolate chips and nuts, baked it in cupcake size... it was similar but a lot better, to my taste. Since this recipe is quinoa based, it is gluten-free, and more filling than your standard wheat-flour based chocolate cake. I could hardly finish one cupcake, and when I make regular chocolate cake, I have no problem finishing two cupcakes. (If you're wondering how I only had one cupcake when I wrote that I tasted two batches, it's because I had helpers who were willing to finish the other half of each.)
