My kids would be happy eating plain old mac 'n cheese seven days a week, but I appreciate a more "mature" pasta dish. This one is easy and does not use too many ingredients. I decided to try stuffing the manicotti pre-cooked, and it was a lot easier. None of them broke this way. If you don't have farmer cheese, you can replace it with cottage cheese. Cottage cheese is more watery, though, so the filling will be harder to work with unless you dry it out first. (You can do this by placing it in a clean white cloth and squeezing out the liquid.) Or, if you don't mind working with it that way, just leave it. The recipe needs extra liquid anyway, in order for the noodles to soften. Happy printing and happy cooking!
